Very clean, balanced and sweet coffee.
My recipe:
Grind size: Medium-Fine; Chestnut C2, 16 clicks
Water temperature: 95°C
Ratio: 18 gr. : 300 ml
Pours:
Bloom | 40 ml - Immersion, valve closed
00:30 | 160 ml - valve open
10:15 | 300 ml - valve open

For this coffee I found the best to use a small water amount for blooming and high(95-98) temperature. I used 2 pours recipe and immersion bloom (open valve at 30 seconds).
I found the best results with a such small grind size and combination of a high pour height for more agitation and a delicate spins after each pour.
For such a long brew time I've got a good results only with soft water (~50ppm). 150ppm water made the cup less balanced, with less acidity and more bitterness.
