In accordance with the seasons we will be sourcing, roasting and brewing the most aromatic and rarest coffees out there. With this end in mind, we focus on quality and sustainability. With a clear vision on how to reveal the innate qualities of each coffee - and to showcase the different varietals and terroir - we roast small batches by hand. We roast gently and lightly and with an utmost respect for the raw material. We also share a belief that coffee is not about absolutes, but a world of undreamt possibilities. 

La Cabra Coffee Roasters

This deep and complex honey process lot showcases notes of soft baked apricot, rich toffee, and a crisp cacao finish.
- Grown by Freddy Orantes and his family in the Fraijanes region, just a 90 minute drive from Guatemala City.
- The first honey process lot we have purchased from Guatemala.
- We visited Primavera, our partners in the region, in March 2020.

Buena Vista Honey Catuai

Fresh raspberry notes are balanced by floral honey, followed by a finish with slight herbal notes reminiscent of rooibos tea.
- Grown by Pablo Recinos Alavarado and his family just outside the town of Petatán in Huehuetenango, Guatemala.
- The farm is named for a large avocado tree in the centre of the farm, which the family use to sell avocados to market.
- We visited Huehuetenango and Primavera, our partners in the region, in March 2020.

El Aguacate

Rich orange juice character is joined by a deep dried fruit sweetness, and a finish with the crisp dryness of green tea.

El Injerto Washed Pacamara

Zesty lemon aromas are followed up by fresh blackcurrant notes and an intense sugar cane juice sweetness.
- A returning favourite from the Kirinyaga region of Kenya.
- The Rungeto Cooperative also own the Kii and Kiangoi washing stations.

Karimikui

Characteristic berry jam notes are joined by wild tropical fruit in this naturally processed lot from the Nzove hill.
- A tough harvest in Burundi meant very low yields across the country.
- A coffee sourced from our partners at the Long Miles Coffee Project this season.
- Low yields meant the project had to buy cherry from some neighbouring hills, like this lot from the Nzove hill to the north.
- Notes: Blackberry, Mango and Brown Sugar

Nzove

Floral aromas of chamomile give way to a soft and delicately balanced cup, with notes of round nectarine and a rich caramel sweetness.
- Grown in the mountainous region of Tolima, Colombia.
- Rust resistant Tabi varietal brings a fresh quality to the cup.
- Arnulfo Quintero has owned the farm for the past 13 years.
- Notes: Chamomile, Nectarine and Caramel.

Alto Bonito

The Bourbon varietal creates a rounder take on the washed Ethiopia profile, with bergamot florals followed by soft apricot and black tea.
- This lot was separated from the rest of the mill’s production due to the varietals the contributing farmers were growing.
- The coffee trees these farmers have closely resemble modern Bourbon, and have similar round and sweet characteristics.
- This is an aromatic washed Bourbon lot, with notes of bergamot followed by soft and sweet apricot, and a crisp black tea finish.

Hambela Arifi Washed

A crisp balance between fresh redcurrant acidity and deep honey sweetness is followed by a long finish with notes of rooibos.
- A coffee sourced from our partners at the Long Miles Coffee Project this season.
- These low yields meant the project had to source coffee from some nearby mills, one of which was Gatukuza, who went on to win the Burundian Cup of Excellence.

Typically sweet Brazilian notes of chocolate and toffee are contrasted with a fresh note of black cherry.
- - Fresh crop from the Cerrado Mineiro region.
Part of the Bioma Cafe project, focussed on the sustainable production of speciality coffee.
- Naturally processed Red Catuai varietal.
- Notes: Chocolate, Cherry and Toffee.

Olhos D'Agua

A clean and transparent Colombian coffee, with fresh peach and raspberry notes followed by a crisp cocoa finish.
Grown by our friend Ana Mustafa.
Experimental process using ‘fed-batch’ method.

El Crucero

Moplaco

We have been purchasing Ethiopian coffees through Moplaco for three years now, and have grown to trust their buying practices and the quality that they are able to offer, both in coffees they produce themselves, and those they purchase from neighbouring mills. This lot is an example of the latter. This lot was purchased by Moplaco from the Mijane Werasa station, located just 10 kilometres outside of Gedeb, one of the main coffee buying centres of this micro-region, where Yirgacheffe coffees are produced. The conditions here are perfect for growing high quality Arabica coffees, with high altitude, cool temperatures and especially cool nights leading to slow cherry maturation and very dense seeds. In fact, Heleanna, founder of Moplaco and therefore one of our most trusted authorities in Ethiopia, believes that the best ‘Yirgacheffe’ coffee comes from the Gedeb Woreda, with great intensity and clarity of flavour. This washed process lot is showcasing soft bergamot florals, followed by crisp and zesty lemon and a black tea finish, overall reminiscent of a fresh earl grey tea.
