We’ve had the great privilege of sampling and sourcing a few coffees from the El Vergel estate now, and this coffee might be our all-time favorite! Producers Elias and Shady Bayter have increased their production of experimental processing methods over the years, and this double anaerobic naturally processed coffee has one of the most exciting flavor profiles we’ve tried in 2021.

To push the fruit-forward characteristics of this lot while still maintaining balance and clarity, the ripe Caturra cherries first undergo a 12-hour anaerobic fermentation in sealed bags. The cherries are then transferred to tanks where they undergo an additional 60 hours of anaerobic fermentation underwater. Finally, the cherries are sun-dried for an average of 15 days. The results are wildly fruity, exotic, and vibrant lots that we can’t stop drinking!
