Showcased as a component of our celebratory 50th Sweetshop blend last year, Bookkisa from Ethiopia is back and delivering big on flavour! A naturally processed coffee, this lot shimmers with sweet syrupy, summer fruit and tropical notes. Named after the local kebele - roughly translated as neighbourhood or hamlet- where the farmers are from, Bookkisa is the combined work of 38 smallholders growing their coffee in fertile clay and loam soils under the natural canopy of the surrounding forests. Processed at the Wosasa Washing Station, day lots are tagged with delivery dates and kept separate. To ensure quality and the longevity of coffee, once the separated lots go onto the drying beds, the start date is logged, and each day's relative Moisture Content Readings recorded throughout the drying period. A super tasty cup, Bookkisa strikes again!
