Named after the Gallito de Las Rocas, widely regarded as the national bird of Peru, this fruit forward stunner of a coffee is produced on the edges of protected natural areas. As a result the biodiversity and environmental practices they use are at the forefront of the way these farms produce their coffee.

After being picked the coffee is fermented in wooden tanks made from fallen Romerillo trees. By being made out of wood they are able to cope with the heat that is generated as the coffee ferments. The attention to detail paid to the beans throughout  the entire growing and processing procedure has resulted in a delightful coffee with notes of caramel and baked apple.
