A wonderfully clear taste profile that is typical for a washed coffee from Colombia. Lots of sweetness and fruity flavors. The Belen Inza consists of 70% + of the Caturra variety and approx. 30% of the Colombia variety, a coffee rust-resistant hybrid from Caturra and Timor. Both varieties are widespread in Colombia and are known for their clear taste profile, which is particularly effective thanks to the washed preparation of the coffee. The Belen Inza comes from the Cauca region, which only became really important for the cultivation of specialty coffee in the past few decades. After the fall of the FARC rebels, however, the region has massively gained in importance - especially thanks to the work of committed exporters. One example of this is Pergamino, who have worked closely with farmers in the region and have developed the necessary infrastructure such as cupping labs to significantly improve the quality of coffee. The result of this work can be seen in this coffee, which is a micro-lot of 40 small farmers from the Inza district. The coffee cherries are prepared by the farmers themselves and sorted according to quality in the cupping lab. Coffees that score over 85 points end up in this lot.

For us, an exciting aspect of specialty coffee is discovering new taste profiles and countries of origin. With the Agua Sarca we are launching our first coffee from Nicaragua. In recent years, specialty roasters have increasingly focused on coffees from the Central American country. This is mainly due to the passionate work of producers and the work of committed importers. This includes the Finca Agua Sarca, which is one of the pioneers for specialty coffee in Nicaragua. Constant improvements in processes and infrastructure, as well as experiments with varieties and processing techniques have already brought the farm some good placements at the Cup of Excellence in Nicaragua.

The result can be found in the cup - a very clear coffee with a bitter base note and slightly fruity notes that convince as a filter and espresso. Definitely worth discovering!
