Miriam Elizabeth Pérez, known as Betty, is one of the most important personalities of the COMSA cooperative. His Clave de Sol farm is practically glued to the COMSA company and they have been working together for years. It's a physical closeness, which also says a lot about the philosophical closeness and Betty's commitment to society. Betty does everything to preserve the flora and fauna that surround her through concrete actions. His farm is managed in agroforestry, trees are planted to provide shade, organic fertilizers are developed to strengthen plants and coffee trees, fruit trees are harvested and coffee trees regularly renewed. The philosophy of COMSA and Betty is to "Play collectively to succeed collectively". The cooperative invests a lot in the education of children to change Marcala's future through an innovative educational approach.

THE PARAINEMA VARIETY
Parainema is a hybrid variety of the Sarchimors family , created in the 1980s by IHCAFE,  the national coffee research center of Honduras. Grown primarily in this country, it is tolerant and resistant to most coffee diseases, while retaining the potential of a high quality cup . Parainema has also become quite famous since it won the Cup of Excellence in 2015 (agricultural coffee competition).

We do everything in our power to ensure that these exceptional coffees are sublimated when they pass through our hands. Thus, we work on the ideal roasting profile to reveal the best of each bean, and to adapt to our customers' extraction methods .
To guarantee optimal freshness, we roast our coffees every week.
In addition, do not hesitate to choose the grind that corresponds to your machine. Depending on your preparation method, we can grind your coffee just before it is shipped, so that it retains all of its aromas.

OUR APPRECIATION

The Nature Café is a very environmentally friendly process because it uses no water. We pick the cherries when they are ripe and then dry them. In this case in the Clave de Sol farm on beds , which have the advantage of ensuring uniform drying. During these 3 weeks, the sugar of the fruit as well as other organic elements migrate from the pulp of the fruit towards the 2 stones, which are our 2 future coffee beans. This usually offers very sweet, fruity cups on a thick, creamy texture. But this processalso weakens the structure of the green bean and that is why roasting is crucial, because too much heat input on these beans would offer smoky flavors. What we obviously refuse at Piha, because our primary desire is to roast all our coffees differently, in order to offer you as much as possible, the most accurate expression of the terroir of origin.
