Peru has been an underdog in the world of coffee for many years predominantly due to the remote coffee growing regions and the lack of infrastructure to reach them. After a 14 hour bus journey from the capital we reach Satipo and the small farm of Carlos and Catalina. The family farm is nestled in the Central Highlands next to the Amazonian rainforest and is unique in that they do almost all aspects of the coffee production themselves. Unlike many coffee farms they have their own small wash station and solar dryer set-up which keeps the coffee at the optimum temperature for drying while keeping the direct sunlight off the beans.

Catimor is a varietal that has been adopted widely in Peru as it is not as prone to coffee rust as other varietals such as Bourbon or Typica. The challenging part is making good Catimor is hard but Carlos and Catalina have nailed it, we salute you!
