This coffee utilises a traditional washed process whereby selected cherries are pulped and then fermented without water for 24-36 hours. Once the optimum moisture content has been reached the coffee is rested in its parchment before dry milling.

The Palestina Women’s Association is constituted of 25 women between the ages of 25 and 65. 80% of the women have not had access to further education opportunities, so they joined forces as a community to improve post-harvest processing.

Cooperativa Cafetalera Capucas Limitada (Cocafcal) or Capucas as they are better known, is situated on and around the Celaque mountain, which is the highest peak in Honduras.

The coffee is harvested at its optimum ripeness and handed in at the cooperative. It is then washed, dried in a solar dryer, and stored in parchment before being trucked to the port of Puerto Cortés. Capucas were the first in the country to build a facility to dry micro-lots in a large scale with solar dryers.

The cooperative has many initiatives to improve the lives of workers and the local community, for example; they pay for a GP to treat workers for free in their health centre, and in 2016 Capucas partnered with the National Autonomous University of Honduras (UNAH) to be able to offer a university education for its members. They also have a football academy which is free to join, and a virtual library for members, children and partners of Capucas Cooperative.

This coffee is roasted medium-light, boasting notes of cacao, smokey tannins and lime zest. Perfect for AeroPress and filter!

Our old friend Cali was with us when we started 92. But, she missed the golden coast, and the VW had a full tank, so off she wandered. She caught all the waves, watched all the sunsets and crashed every beach party. And then she came back to tell us all about it. 

In the cup you can find bright, sunny, fruit flavours with gentle dark chocolate notes coming through on the finish.

Where to start with Hope Street Espresso. Well, Hope Street would probably be the best place! That’s where we started with our original 2.5kg roaster. We blended, and cupped, and sampled, then re-blended and re-cupped and re-sampled until we had something that we thought was great.

Hope Street Espresso looks forward to the new generation of espresso. The cup is full of tropical fruits, dark berries and citrus notes, underpinned by a rich chocolate and caramel foundation. Bright and lively on its own, moreish with milk.

Guatemala produces 2.3% of the world’s coffee, primarily on hillside farms or ‘fincas’. Typical guatemalan qualities include a full body with a light and fruity acidity.

The Coban region of Guatemala is just one of five regions represented by the COABA project. The project, created by InterAmerica Coffees (US office) brings together coffees from Coban, Oriente, Atitlan, Bojales and Antigua, allowing small holder farmers a new and more direct route to market than the traditional terminal market system. All the coffees sourced are SHG (Strictly High Grown) certified which assures that all the coffees sourced have been grown at over 1350masl.

Our Coban is a washed coffee that boasts a full body with notes of Blackberry, raspberry and dark chocolate.

Swiss Water Decaf

This washed decaf is produced by the Iloma AMCOS (agricultural marketing cooperative society), based in south west Tanzania. The AMCOS gives back to its community by providing electricity to the surrounding villages and opportunities in advanced agricultural education and training to the locals.

The swiss water decaffeination process ensures that the coffee is chemical-free, while removing 99.9% of caffeine and retaining rainforest alliance and organic certification.
In this coffee, you can expect notes of tangerine, cloves and caramel. Perfect as a pourover!

Iloma Swiss Water Decaf

Origin: Yunnan, China

Liverpool is home to Europe’s oldest settled Chinese community, and we were proud to be able to work with the wonderful Lu Ban Chinese restaurant here in Liverpool to do something that celebrates this.
This coffee originates from Menglian County, Yunnan, in Southern China, and is produced by an established family-owned farm in the area that provides education and healthcare to all in the nearby villages.
In the cup you will find notes of dark chocolate, cinnamon and green apple.
