The producer, Israel Degfa, has been integral not just to the farming of this coffee, but also to the selection, milling and export too. His coffee is farmed at an astonishing 2,300 meters. At these heights the coffee cherries mature slowly, allowing for high natural sugar development and exceptional quality coffees! Expect classic flavours typical of both the process and region - heady florals, ripe fruits and sticky sweetness.

Israel Degfa is an unusual case in that he is a sharholder in the organisation which exports and transports the coffee to us here at Rave. By having more control over the supply chain Israel can ensure his coffee maintains its integrity and quality. It also enables us to shorten our supply chain and have better transparency of the product. Ethiopian coffee exports have long been controlled by a centralised, government controlled organistion called the ECX (Ethiopian Commodity Exchange) which only in recent years has allowed vertically integrated buying models like this to exist - the producer selling directly to the buyer outside of the auction system - and therefore we would expect to see greater transparency and quality for Ethiopian coffee in the future.
