Paraje Los Machos is an association of 180 coffee producing families from three towns in the Sierra Juarez; Santo Domingo Cacalotepec, San Miguel Yotao and San Juan Juquila. The Sierra Juarez, as well as being the birthplace of Benito Juarez- Mexico’s first President of indigenous origin- is a temperate mountain range to the north of Oaxaca city. Most members of the association are of Zapotec heritage and speak Spanish as second language after Zapoteco. There is a very strong, communal aspect to Los Machos across its three towns that is deeply rooted in the historical ties of the community to the region. Rather than employ pickers during the harvest, when a member’s coffee is ready to be picked, several neighbours will help the producer to harvest their coffee. Instead of payment, the producer whose coffee is being harvested is expected to cook lunch for everyone and in turn, to help pick the coffee of those who helped them when their coffee is ready.

El Morito showcases how cultivating a more delicate and complex coffee varietal can transform flavour expectations from a region. This pacamara, naturally processed, delivers intense and diverse fruit flavours from pomegranate to pink grapefruit. There are notes of honey blossom and rose, reminiscent of Turkish Delight and ripe citrus.

Placing in a remarkable 7 of the last 8 Cup of Excellence auctions, José Roberto Montessoro has cultivated high scoring yet delicate varietals on his farm, El Morito. Residing at an impressive 2200 metres above sea level in parts, José's farm is perfectly placed to produce some of the most exceptional coffees in the world. In retaining natural forest cover, the coffee trees beneath can ripen slowly, producing a mature sweetness and complex fruit flavour. Guatemala is renowned for producing the more classic and denser varietals of Bourbon and Catuai that give a classic rounded, sweet and nutty profile. El Morito, however, is showcasing how diversifying into more unusual varietals can subvert what people typically expect of the region. The farm takes a socially sustainable approach, as well as environmental, in providing medical care for staff and supporting the local school.

The Izuba Washing Station receives fresh cherries from the surrounding smallholders who farm in the hills of Kigeri, Ryamukona & Mugoyi. Each hillside is recorded alongside the coffee cherry produced there in order to monitor quality changes according to aspect, shade or altitude! This natural processed coffee takes up to 30 days of drying and the result is lots of floral, tropical fruit and citrus flavour.

The Mio Estate’s mission is to oversee all aspects of coffee production, export and import. This makes them a great partner for Rave as we continue to remove needless steps in our supply chain. The Estate’s coffees are fully traceable through every stage, from the exact location of cherry harvest, to which trucks were used for transportation; never before have we received such comprehensive traceability reports!

The Mio Estate’s mission is to oversee all aspects of coffee production, export and import. This makes them a great partner for Rave as we continue to remove needless steps in our supply chain. The Estate’s coffees are fully traceable through every stage, from the exact location of cherry harvest, to which trucks were used for transportation; never before have we received such comprehensive traceability reports! The Estate also responsibly cultivates their land and dedicates only 50% to coffee production and the remainder to natural forest. Natural processing is preferred here so as not to exploit the region’s rich natural spring water sources - and the Estate is also committed to maintaining water flow and improving quality. In 1939, Renato Ribeiro was born at Fazenda Cachoeirinha, where his father was employed as an immigrant worker for many years. The farm is now called Mió, and its owners are his daughter Renata and her husband, Carlos.

The Atsabe mill was custom built in 2018 and uses gravity to move the coffee through the different washing stages to eradicate unnecessary handling and expensive equipment. The mill has enabled the local coffee community to come together, share knowledge, and collaborate towards their founding goal of moving the coffee quality into the speciality sector.

A natural process decaf that actually delivers on flavour!  This coffee is grown in Villamaria, Caldas (another of the Red Associations we support with Raw Materials), and processed as a natural before being sent up the road to Manizales for decaffeination via the Sugarcane process.

The Bulessa Washing Station is run by Tizita Bizuneh, founder of the Women’s smallholder group. The station is managed by a team of 15 women, with the contributing coffees coming from local female farmers. The project provides agricultural workshops and registration to the Kerchanshe support network which helps smallholders and their families access healthcare and education.

Situated on the foothills of Mt Kenya, around 150 miles from Nairobi, the Tegu Factory processes fresh cherry from the surrounding society members. The hand-picked cherries are sorted before washing, as well as after, to remove over/under-ripe fruit, thus ensuring exceptional quality and consistency of flavour.

The honey processing of this coffee allows for 70% of the coffee cherry pulp to be left intact with the seed during the drying process. These are raked on patios and turned regularly to ensure an even and clean tasting fermentation. The result in the cup is one of heightened natural sweetness, which in turn enhances the caramalisation of the roasting process. This is the perfect coffee for all day drinking and versatility.

Costa Rica Hermosa NO.117

The producer, Israel Degfa, has been integral not just to the farming of this coffee, but also to the selection, milling and export too. His coffee is farmed at an astonishing 2,300 meters. At these heights the coffee cherries mature slowly, allowing for high natural sugar development and exceptional quality coffees! Expect classic flavours typical of both the process and region - heady florals, ripe fruits and sticky sweetness.

Israel Degfa is an unusual case in that he is a sharholder in the organisation which exports and transports the coffee to us here at Rave. By having more control over the supply chain Israel can ensure his coffee maintains its integrity and quality. It also enables us to shorten our supply chain and have better transparency of the product. Ethiopian coffee exports have long been controlled by a centralised, government controlled organistion called the ECX (Ethiopian Commodity Exchange) which only in recent years has allowed vertically integrated buying models like this to exist - the producer selling directly to the buyer outside of the auction system - and therefore we would expect to see greater transparency and quality for Ethiopian coffee in the future.
