The natural process used on this coffee after it’s been harvested helps to impart some flavours from the coffee cherry as well as the ones created during the fermentation that takes place using this method. La Cascada’s acidity and sweetness are reminiscent of cocoa nibs and dark chocolate along with the sweet fermented notes and juicy long-lasting finish of over-ripe blackberries.

La Cascada comes from a 5th-generation, quality-focused coffee-growing family from Paicol, Huila, Colombia. Not only are they the largest producer of coffee in the region, but theirs is also the only farm certified to export coffee oversees. Playing such a central role in coffee production comes with a certain degree of responsibilities. The family has in fact made it their mission to provide stable jobs and educate the people of the region to grow and harvest fully ripe, defect-free, delicious coffee cherries.
The geographic and climatic condition of the area infuses the coffee with distinctive sweetness and flavour. The cherries from La Cascada grow in the midst of sugar cane fields and in the shade of orange, mandarin and tropical fruit trees, including bananas, mango and pineapple. It’s this colourful palette of flavours that gives the coffee its unique tones, infusing every cup with distinct sweetness and brightness.
