The variety of arabica here is steeped in history and makes for quite astonishing botany. Java Abisinia is a selection from one or more Ethiopian landraces [indigineous heirloom varieties] of coffea arabica. Records indicate that what we know as Java was selected from a few mother trees in Ethiopia by the Dutch coffee researcher P.J.S. Cramer in 1928. He sent seeds to Java where the plants flourished and showed resistance to leaf rust where other arabica varieties had faltered.  The cultivar is referred to as abyssinia or abisinia, the name of Ethiopia at the time. This true cultivar was eventually taken to Central America where it flourishes in the subtropical climate.

It’s time to calm the proverbial ham. Working from home is majestic and horrific. You cannot do it all. So don’t. Pop the kettle on and take a timeout. This Colombian coffee is about kicking back and taking a little time to yourself. Relax. It’s you time. Hashtag the soft fruity characters of this coffee have a palpable toffee kick and super cleansing back note of faint lemongrass.  

It makes a generous french press cafetiere and filter style coffee that feels thick and chewy without being overbearing. When made as an espresso it is like sipping a super rounded Werther’s Original laden with fresh Amalfi Coast lemon zest. Just for good measure.

This fully organic and Rainforest Alliance Certified coffee comes from various smallholder farmer members of FUDAM - Fundación Agraria y Ambiental Para el Desarrollo Sostenible. They have come together to produce an exceptional green coffee and are united in the highest standards of coffee production and we feel honoured to roast, showcase and serve their passionate work.

The fermentation highlights the praline/nougat and enhances an already bold body while adding, lychee and a concentration of juicy raisin.

You are ludicrously aware of Wee Stoater but this another vintage version. A limited edition even.

Something with a little extra terroir and a single variety of arabica. If you inspect the beans you’ll notice that they are very uniform in shape and size. Peaberries only develop in 1/10 of every coffee cherries when there develops only one bean inside the cherry. 

Peaberries are known to be a more concentrated version of their siblings who grow two to a coffee cherry. This affords an extra level of complexity for you to explore. For us the vibrancy discovered in Ultimate Stoater reinforces our already heightened opinion of Brazillian grown beans.

Ultimate Stoater

We are fervently passionate about this new coffee. Nothing but rhapsodies of praise for this arabica. Complex, aromatic and persistent flavours permeate each sip. Textural viscosity is full bodied and reminiscent of the very perfumed nectar found in coffee flowers during blossom. We literally cannot stop waxing lyrical about it. 

Kyaw Hlaing is the owner of the Moe Htet Estate farm, which he runs with the
help of agronomist U Kyaw Wan He and his number two, Aung Hleing Phyo. He
has long term experience gained from working in coffee research as well as with agronomists specialising in grafting and coffee cultivation. The farm sits on the outskirts of the city of Naungcho, where the coffee plants grow under the shade of silver oak trees and macadamia trees, with erythrina used as a short-term shade solution. The blistering heat during the day is so radiant that shade growing is necessary to prevent leaf damage and the coffee cherries ripening too quickly. 

The coffee industry in Myanmar definitely has faced difficulties and will likely face more. The political situation of the country has historically raised eyebrows. For us, it comes down to the individual farmers who are striving to produce the best coffee they can grow in order to make a living. This is why steps have been taken by the wider coffee industry, outside of Myanmar to help these individuals reap the benefits of their hard work. The Specialty Coffee Association has become involved and the majority of Myanmar’s coffee is now graded and has earned specialty grade certification. This alone, has given farmers access to the ever-growing specialty coffee scene and into the international markets. Various programs have taken place to modernize Myanmar’s coffee industry, updating farming practices helping farmers to reap the benefits. Ensuring we have full traceability of our green coffee that we buy is paramount and we have complete certainty that this farm is supporting the livelihood of people working with and for Mr. Kyaw Hlaing. 

Wax Lyrical

Brought to Unorthodox by Danilo Barbosa and family. From Fazenda Cachoeira in the Minas Gerais region of Brazil. Unorthodox have selected Danilo's entire harvest of natural yellow catuai to be what you know as Wee Stoater.

Myself, Danilo Barbosa jointly with my sons, Victor Marcelo and Sergio Ricardo are the fourth and fifth generations of the family tradition of coffee production. 

We believe in a revolution that a beverage produced with dedication can make the lives of the people who would consume it. For us, coffee goes beyond caffeine to get energy and a drink that warms up. Our efforts and hard work can have a direct impact on the final cup. 

At Unorthodox we love this coffee. So much so it’s become our flagship single origin. The flavour notes of hazelnut, caramel and cacao work well as a black coffee or with milk. We roast light to enhance the natural flavours of the coffee bean, without bitterness.

Wee Stoater

Kunjin is the name of this coffee processed at a centralized plantation mill called Kindeng in the Western Highlands. Kunjin is the name of a nearby region from which many local producers bring their coffee. The mill purchases  coffee cherries from smallholder farmers who each have about 1.5 hectares of land. Through the centralized milling and drying, our partners on the ground control quality at the processing level. Day lots are cupped and separated to build our containers while microlot grades are processed separately. Coffee is processed in a leased, vintage John Gordon wet mill in an old plantation left over from colonial times, as owning a mill or even property in PNG is risky. It takes years to establish a reputation of trust with the local tribes and there is always risk of losing a deal or relationship over the perception of division of wealth.

Mindblown

This coffee will have you waxing lyrical. The unique variety of arabica is a first for us at Unorthodox. Cultivated by Jorge after a heavy outbreak of leaf rust swept through Central America in 2013 as a way of ensuring he could grow and sell micro-lot coffee in challenging circumstances. There is a subtle Jannettas strawberry ice cream hit interlaced with Italian Frangelico hazelnut liqueur. The thickness at the end is sumptuous. The coffee has terrific body.

There are over 100,000 coffee farmers in Honduras and over 90% of them are smaller farms. They work together to contribute to a sum of roughly 6 million bags of coffee exported each year. 

This particular lot of Obata, a leaf rust resistant variety developed in Brazil using a Timor hybrid and Villa Saarchi parentage is a clean and balanced coffee with a delicate but distinct acidity profile. Grown by Jorge Isaac Hernandez in the Copán region of Western Honduras - right on the border with Guatemala. 

Ferment-D

Decaffeinated coffee does not get better than this. FACT. You’ll get a real orange juice sweetness of character and sensational few nutty notes. A bit like a lot of our baristas! We bring you a Colombian coffee without caffeine thanks to a process called the Sugarcane method. Our customers love it in a flat white and always remark ‘you would never know the difference’.

Decaf is done either at the farm or in a factory by steaming the raw green beans before adding a fluid derived from fermented sugarcane which extracts over 99% of the caffeine. Finally the beans are dried back to 10-12% moisture before being transported to Scotland. 

Decaffeination is not an easy process but it’s improved so much over the last few years that finally we can be confident in drinking a super tasty cup of coffee without the jitters. For us at Unorthodox Roasters we are thirsty for coffees that actually deliver an exciting flavour profile. This one really does.

Dee Calf

Are you ready for the Safari of flavours in this exemplar microlot coffee situated just north of Nairobi. The subtleties of the light roast style are best enjoyed as a pour over preparation. However, we find the intensity and complexity of flavours also create a dynamite milk espresso drink. Berry undertones dominate the cup with an assault of sweet caramelised sugar. In the finale, there is a subtle nuance of perfumed dark cherry. A grandiose coffee. In every way.

The Full Story
The cultivation of coffee started only in the late 1800s thanks to a Scottish missionary, John Paterson. Coffee in Kenya is typically traceable down to the factory, or mill level. Most farmers own between 1/8 to 1/4 of a hectare - known as a ‘shamba’ and often grow crops other than coffee too. Thus, relying on a central processing unit for sale and processing of their coffee.

Producers deliver in cherry form to a factory, where the cooperative will sort, weigh, and issue payment for the delivery. The coffee is then blended with the rest of the day's deliveries and goes on to be processed.

Tarrazu - a small area near the centre of Costa Rica where you find the communities of the Coope Tarrazu R.L. The area boasts what coffee experts have dubbed perfect conditions for coffee growth.
