Like biting into chewy, fruity chocolate, San Antonio is a delight. A naturally processed lot produced by Johny Javier Lemus Valle in the Chalatenango region of El Salvador, get ready for a treat! Growing up on his father's farm, Johny spent his teenage years picking coffee for neighbours and family. Determined to build on his family's coffee-growing legacy, he bought San Antonio 10 years ago and set out growing speciality grade coffees right from the beginning. Having learnt all he knew about coffee from his father, Johny has adapted some of his harvesting and processing practices. Working hard to invest in raised beds, Johny says the biggest challenge was losing batches while experimenting and perfecting his processing methods. Working in construction in his spare time and off-season, Johny's dedication and ambition shine through the coffee he produces. Captured in this lot, chocolate drops with bright tangerine and guava notes will have you back for more.
