Next on the Colombia regional tour is Huila. A classic producing region, coffees from here offer a balanced, medium-bodied cup with bright acids and caramelised sweetness. With so much choice, selecting a single coffee to illustrate the quality and distinct flavours of Huila was more challenging than we thought. Then, Matambo crossed our cupping table. A wonderfully balanced, medium-bodied cup with juicy notes of cherry and apricot, Matambo hits the nail on the head.
