A first-time showcase, we're thrilled to present El Amate. An exciting moment on our sourcing calendar, 2021 marks the first harvest working with Primavera Coffee. A family-owned business that focuses on Guatemalan farmers who are just beginning to access the speciality market, Primavera Coffee manages the movement of coffee from farm gate to import while also providing on-the-ground training for their farmer partners. Coming to us from Huehuetenango, El Amate is produced by Demetrio Hernandez. Using natural spring water, one of the main contributors to the sweetness and structure of El Amate is the limited amount of water used during processing. Harvesting ripe fruit only, Demetrio immediately dry-pulps the cherry. He then leaves it to ferment in concrete tanks for up to 30 hours before the next step of being manually washed, sorted and sun-dried on patios. A tasty delight, welcome El Amate!
