We have been a fan of coffee from the Koke washing station for years, but this lot is extra rare and we haven't had it for 4 years, so we were very excited to get it back.

What is rare about this lot is it's natural/honey hybrid process.  This coffee is delivered to the washing station where the coffee begins it's dry fermentation for 2 days with the skin on the cherry (natural process).  The cherries are then collected and depulped slightly removing the skins leaving a majority of fruit (mucilage) on the bean to dry for up to 20 days.  During drying the coffee is moved around on the raised mesh beds to allow for better air flow and even drying.  This process allows for accentuated fruit flavours that are crisp and defined.
