Last year, we had coffee from this processing plant in the Underdog edition, and through this project we invested CZK 12,000 in portable coffee drying nets. This year, thanks to the planning of the production volume more than half a year in advance and better logistics, we had the opportunity to increase the volume of coffee from Uganda and it will make sense that the largest volume is from Michael.

AA is a designation for a sorted part of coffee with a higher density, a smaller percentage of defects, but mainly based on the grain size, which is called the so-called "screen size" (higher than 18). As these factors also correlate with the taste of coffee, coffee with the AA label should be of the highest quality, as a higher grade does not officially exist (our AAA label is fictitious, as it corresponds to the screen size 19+ department). In addition, this lot is further divided into "highland" and "midland", ie coffee from higher and lower altitudes. There is not much difference in taste between the two parts of the lot, however, "highland" has a more complex acidity and is more fresh and light. We decided to roast both of them gradually, so every week in the line-up, a few tens of meters of descent down the hill!
