PS Coffee Roasters

This makes a super smooth, sweet and easy to drink espresso or filter based drink. This is one of the first times we've done both an Espresso and Filter roast of the same coffee. This is because it works well with both types of brewing and our belief is that its best to roast specifically for the type of brew method you intend to use.

Simply select which brew style you intend to use it for above. So if thats going to be a home espresso machine or a Moka Pot then select Espresso. If its going to be a V60 or Aeropress then select Filter roast. On the flip side if you prefer a darker note to your filter coffee then select Espresso roast style and vise-versa if you prefer a brighter brew with your espresso then select Filter.

This is our first buy through Coffee Bird. Coffee Bird is a family owned and women-led company who are very transparent in what they do. We really like what they've done on even the smaller things like using recycled denim to package their coffee. They pay 37% more than the industry average in Guatemala and are purely focused on the Guatemalan coffee industry. I cant think of a better company in Guatemala to source Guatemalan coffee in both a sustainable, ethical and quality way. 

La Esperanza

Usually when we buy coffee its from a farm that can produce at least 5-10 bags of coffee. In this case the coffee is from a coffee collective called Cafe Occidente, which ensures the farmers have access to support all year. With this coffee five farmers with very small farms combined their output to create this and what a brilliant result they have achieved. 

El Desvelado

So we came across this coffee in the most strange way. It was sent to use as a blind tasting experiment in collaboration with a Norwegian University. All of the samples were simply amazing and this was our favourite of those samples. So obviously we had to enquire about buying it. 3 weeks later here we are. 240kg of this amazing stuff. As a roaster Im always faced with the prospect of roasting for filter or espresso. Right now, I feel this is more suited to filter style coffee given how sweet and floral its characteristics and flavour notes are so this is exactly how Ive roasted it. If you love a good AeroPress or V60 this is the one for you. Enjoy, Simon.

Dhilgee

If you like coffees that completely break from tradition then this might be the one for you. This is a honey coffee fermented with Saccharomyces (Beer brewers yeast). It is a blend of varieties commonly grown in the area including Sigararutang, Andung Sari, Lini S, Ateng Super, P88, and Bor-Bor. This lot is part of a series of experiments that are being done at Frinsa Estate with the producer Wildan Mustofa, his wife Atieq, and son Fikri.

The cherries are harvested, floated and sorted. They are then brought to a central location where they put the cherries in plastic bags and add lactic bacteria and Saccharomyces. They close the bags and let the cherries ferment in this anaerobic environment for three days. During the fermentation the bags are turned for more even fermentation. The coffees are then pulped, and dried on raised beds as honeys with the mucilage attached.

All 250g bags are hand painted by our very talented mother. All 1Kg bags are NOT hand painted, but all contain the same coffee of course and €2.50 on every 250g bag & €7.50 on every 1KG bag sold will be donated to Crumlin Childrens Hospital.

Please note that we have very limited stock of these. About 180 x 250g bags this year for us and 80 for our wholesale customers and thats it. We will be prepping a few 1Kg bags also and if we sell out of either we will prep another bag for you on our next roast day which is every Tuesday and Wednesday.

Christmas Coffee - Limited Hand

Most of our coffee is bought through Nordic Approach because they are top of our industry both ethically and for quality. For a bit of change and chance to support an Irish business we decided to buy a brilliant coffee imported by Green Coffee Imports. Keith started this Irish company a few years ago and has grown so well.

The farm itself is BSCA & UTZ certified. Another great thing about buying Brazilian coffee is the government legislation there protects employees very well. The farm supports their employees by providing access to municipal schools and daily bus transportation. They employee 30 people year round and 100 during the harvest (May - September)
