Bookkisa is the name of a sub-kebele (neighborhood) near the town of Shakiso in the Guji region. The Kebele also gave its name to the cooperative with 33 small farmers. The average farm size of the farmers is just 2.55 hectares.

The coffee grows under the canopy of a natural forest, much like most Guji coffees in the area. The fertile red land consists of clay and loam. All cooperative farmers are trained in agronomy and post-harvest processes by the "King of Guji", Ture Waji. The farmers plant their coffees organically.

During processing, each micro lot is isolated for each collection day. The cherries are collected and selected by hand. Too small or overripe fruits are sorted out, so the end product is sweet and clear.

The cherries are then spread out on the drying tables and sprinkled in thin layers to avoid excessive fermentation. After the cherries have dried and the pulp has been removed from the coffee bean, the beans are sorted again by hand.

Ethiopian coffees are something of the best and shine with their variety of flavors. This lot is great for drinks in combination with milk, but also not to be despised on its own as a very fruity espresso. Brewed with a filter, this coffee is intense and long-lasting and certainly a highlight as a cold brew coffee.
