Las Nubes, which translates to “The Clouds” is a farm located near the base of Santa Ana Volcano. The volcano last erupted in 2006, resulting in a large amount of ash being thrown into the air. Once settled, the volcanic ash acted as a perfect natural fertiliser for growing coffee in the area.

This coffee was produced by Ernesto Lima, brother of Fernando Lima, one of our longest standing direct-trade partners. Ernesto produced this coffee using an experimental processing method called anaerobic (without air) fermentation. The coffee is left to ferment in the shade for 48 hours, which causes the mucilage on the outer coffee cherry to break down more slowly.

This method allows more of the natural sugar in the cherry to soak into the bean, resulting in tropical tasting notes of pineapple and passion fruit with a medium, rounded body and long, chocolatey finish.
