In our opinion: This is a Brazilian coffee that does not bring the taste of the usual Brazilian coffee at the first tasting. In a little more detail, we would characterize it as a cavalcade of orange wine - orange liqueur, caramel and milk chocolate, like a cream candy. It is characterized by a medium body with a clean long finish.

History

Marilda, from a coffee-growing family, has been producing specialty coffee with her partner, Nilim, since 2016. The Sítio Das Colinas farm enjoys a privileged location at 1250 m above sea level in the Caparao Mountains, where the microclimate is ideal for growing specialty coffees. From 2019, they experimented with anaerobic fermentation, resulting in a 90+ coffee rating. It was then that they first exported their coffees to Europe. Marilda loves what she does and her partner fully supports her in making one of the best coffee in the region.

Harvesting and processing

During harvest, they are strictly picked, picking only the ripe cherries, while the greens remain on the plant until they reach the harvestable, perfect stage of development. After picking, the outer skin of the cherry is peeled without water and kept under anaerobic conditions for 192 hours. The cherries are then dried on suspended beds in the sun for 5 days. After drying, the coffee is left in wooden boxes for at least 30-40 days.

Azóta is a nemzetközi kávés szakma aktív résztvevője, a külföldön is elismert Tamp&Pull kávézók alapítója és több ismert márka képviselője.
