Worka washing station
When ripe cherries, hand-picked by farmers, are brought to the washing station, they are selected and sorted for anaerobic fermentation. This special group, consisting of only the most ripe cherries, is placed in special Grain Pro bags to complete the fermentation process in an oxygen-free environment, and fermentation lasts 18-24 hours in sealed tanks. Cherries will be exposed to temperature, pressure, pH and dry matter ratio during the fermentation process. After fermentation is complete, cherries are placed on raised beds and dried in the sun for 2-3 weeks. During this period, a uniform and ideal drying speed is achieved for cherries that are regularly rolled by hand.
