Carlos is our second coffee from the beautiful farm La Estrella in Colombia. The espresso is quite complex with note of blueberries, tropical notes like pineapple and raisin sweetness. 

 The producer of this exceptional coffee is Aura Eliza Nupan. He carefully selects ripe cherries and begins post harvest processing by sorting out immature and over ripe cherries through removing “floaters” when the cherries are immersed in water. The next step is manually sorting cherries to ensure consistency.
