This coffee comes from one of four farms that Jaime Figueroa Cantillo owns named Samaria.  Tucked in the hillsides of Garzón, Huila, this farm is located between 1450 - 1650meters. Jaime is currently growing the big three varieties, Caturra, Castillo, and Colombia, as well as some Catimors and some newly planted Tabi. All of the coffees were dried on raised beds under shade. The complex sweetness that this coffees offers is able to really shine through even after it undergoes its decaffeination process.

Junto Coffee

This coffee comes to us from two different farms in the department of Nueva Segovia in Nicaragua. Luis Alberto Balladarez, owner of both Finca Lo Prometido and Finca La Bendicion, decided after cupping the Java from both farms that a blend of the two offered the best quality and profile.

Balladarez is no stranger to producing exceptional coffees. His name has become commonplace in the Cup of Excellence competition, first securing 13th and 3rd place in 2017 before winning in both 2018 and 2020. Quality control is taken very seriously, beginning with optimal cherry picking at the farm level. Balladarez’s care and attention paid to each coffee throughout processing is second to none. We’re proud to offer the Java Natural and exhibit the hard work of Finca Lo Prometido and Finca La Bendicion.

Finca Lo Prometido & Finca La Bendicion

We are thrilled to offer coffee from the Humure washing station for the second year in a row. This lot is particularly special as it was produced by Athanase Ndagijimana, one of only four single farmers Sundog Trading was able to purchase from during the 2020 season. It is no easy feat to keep small coffee lots separate throughout the entire process of cherry collection, fermentation, drying, storage, milling, and export so this coffee represents an exciting development in traceability and producer-level relationships in Rwanda. 

Humure washing station, named after the highest hill in the area, is located in the Eastern Province of Rwanda. It was newly constructed in 2017 and Emmanuel Rusatira of exporter Baho Coffee purchased the station in 2018 after watching it be very poorly managed. He has significantly invested in infrastructure—new fermentation tanks, new washing channels, and larger storage units—thus increasing production capacity by nearly 20 times in the past two years. Humure is currently the largest station that Emmanuel owns, producing just over 4 containers (1,300+ 60kg bags) annually and employing 220 people during the peak of the season. Humure’s main station manager is a woman, which serves as an example of Baho’s widespread investment in gender equity in Rwandese coffee. 

Emmanuel focused heavily this year on growing Baho’s seedling distribution program; 50,000 were distributed to the Humure farmers in 2019. Emmanuel has found that with his higher cherry prices, producers are becoming rapidly more interested in investing in their coffee farms and growing future production.

Athanase Ndagijimana

El Edén Java is a microlot produced on Shady Bayter’s estate project, El Vergel. The farm is located in the mountainous department of Tolima and benefits from the nutrient-rich soil of the inactive volcano it sits upon. Managed by himself, his brother, Elias, and their mother, Marta, El Vergel has become known as one of the biggest producers in the region since its beginnings in 1995. 

The Java varietal is rare in Colombia and the Bayter brothers have developed a unique processing method based on the coffee’s density, genetics, and other characteristics. They approach all of their experimental processing methods with the goal of creating and passing on methods to help improve the quality of life of the families who work with them on El Vergel.

This coffee was carefully picked and sorted at +95% cherry maturity, which assisted in developing an extended fermentation during processing. For this natural anaerobic process, cherries undergo 60 hours of fermentation in plastic tanks where they are covered to induce microbiological activity. After the first 20 hours, tanks are filled with 50% water, partially submerging the coffee cherries and inducing bacterial activity for the remainder of the fermentation process. The coffee is then dried for approximately 30 days, after which it is stored for 2 months in grain pro for optimum maturation.

We’re proud to offer this beautiful coffee and to have had the opportunity to work closely with Shady to source both it and El Vergel’s first crop of cacao for our chocolate bars.

El Eden Java

Rosemberg Trochez of Finca El Cremal is a member of Cafioccidente, a cooperative of coffee farmers in the southern and western regions of the Valle del Cauca department. Cafioccidente spans the western and central mountain ranges of the Colombian Andes, encompassing a wide variety of growing regions and conditions, which results in diverse cup profiles. The co-op directs coffees to commercial channels that allow them to pay farmers the highest prices possible, and they invest surplus in activities and services for members and the community.

Coffee for Peace, an alliance of coffee farmers and market allies created to develop, facilitate, and promote the trade of traceable coffees from historic violent zones in Colombia, facilitated getting this coffee to us. Their goal is to make specialty coffee a key component in the historic transition to peace Colombia is undergoing. Through targeted technical training to improve coffee quality as well as market linkages, Coffee for Peace is assisting thousands of coffee farmers in tapping into specialty markets, thereby increasing their incomes and sustaining the peace process.

Rosemberg Trochez Finca El Cremal

This coffee comes to us from Mount Kilimanjaro Estate, located on the southern slopes of Mount Kilimanjaro. Rich volcanic soil, indigenous shade trees, and glacier-fed rivers provide the estate with ideal conditions for growing exceptional coffees.
