Located in the southern foothills of Mount Kenya, the area surrounding the Karani factory is ideal for producing some of the finest Kenya coffee. Farmers here typically harvest around 250 coffee trees on half-acre plots of rich red volcanic soil and deliver cherry to the Karani factory, one of 11 factories managed by the Kabare Farmers’ Cooperative Society. The Karani factory only accepts the ripest cherries and additional hand sorting and floating removes less dense and damaged beans before the coffee is depulped, fermented, and washed. After the coffee is washed, it is soaked in fresh water long enough to solidify that hallmark Kenya profile. The coffee is then dried on raised beds, carefully constructed to ensure proper air flow and temperature control for optimal drying. During milling, the green beans are sorted for screen size and graded according to size and shape.
