Origin: Chigalagala Kasese
The name, Chagalagala, from Uganda came from a taste profile rather than a specific location. All the farmers who contributed to the harvest are part of a market program in local villages around the Kasese area. In the cafe we ​​find a very special profile, with ripe fruit flavors. Coffee cherries are selected based on quality and dried in beds with continuous sorting. All coffees come from small communities around Kasese in Western Uganda.

Most cherries come from farms located at altitudes between 1500 and 2000 miles. In 600 - 1000 trees on average, each tree produces about 0.5 kg of cherries. Farmers grow a combination of varieties, mainly SL14, 28 and 34, as they do in Kenya. Immediately after delivery the cherries are soaked in water. Healthy cherries will sink, while damaged cherries will float and be removed. The remaining cherries are sorted by hand to remove the poor quality cherries, then kneaded normally on the tables by adjusting the layers according to the type of preparation and fermentation we want.
