Ana Sora is the name of a private plantation located in the Guji region. Maybe it would be an "ordinary" plantation, of which there are many in the area, if not for how high it is located. 2,300 meters above sea level is a lot, even by Ethiopian standards! Arabica fruits that grow so high - in much cooler air - mature longer, which translates into their complex, fruity flavor profile.

Ana Sora's owners have been producing recently washed coffees, but the effect is perfect. Let us remind you: the toll treatment means that the cherries of the coffee tree, after picking and disguising, go to a special tank. Sometimes, if the harvest lands at the processing station in the evening, the fruit "matures" in the tank until the morning. Then, with the help of water, they are washed out and go to the so-called depulpera, a machine that removes the skin and pulp from the fruit. The clean grains are transferred to drying platforms and dry (frequently and evenly turned) for approx. 10-14 days.
