This experimental lot was produced for us by Roberto at Divina Providencia in El Salvador. The idea behind it was that the variety Sarchimor is usually not the most complex coffee, but it is Roya resistant (Roya is 'leaf rust', and has decimated a lot of coffee production in Central and South America) and we thought that if processing can have such a drastic effect on the flavour profile of other coffees then why not with Sarchimor!

The hypothesis was that anaerobically fermenting the coffee we could increase the pigment transfer and slow down fermentation, resulting in a more floral than normal cup. The end result; a very sweet, syrupy and round cup. Finding out that through anaerobic processing a Roya resistant coffee variety we can get a stand out cup profile is very exciting!

Specialty coffee from Colombia, roasted by Berlin-based Fjord Coffee Roasters. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the notes of  orange, raisins and gooseberry.

Marysabel Caballero and her husband Moises Herrera are working with over 200 hectares of land completely planted with coffee. They are 2nd and 3rd generation coffee farmers and have been rewarded many times for their commitment to developing coffee quality in Honduras.

After de-pulping the mucilage is removed with the use of a Penagos aqua pulper. The parchment is then fermented for 12 hours before it is washed using African washing techniques which helps sorting floaters and undeveloped beans from the denser and more developed coffee.

After washing, the beans are soaked for about 12 hours in running clean water.

This coffee is a certified organic lot from East Guji.
The coffee is grown by a small collection of local farmers which form part of the Sookoo Group managed by Ture Waji, who is a local expert in agronomy and permaculture.

The Sookoo Group grow their coffee trees in Semi-Forest plantations allowing for shaded plantations and a rich ecosystem. Sookoo Group members also receive training and information on soil preparation, planting weeding and harvesting - the farmers are then able to command a higher price for their coffees and for this particular lot received approximately double per kg than the price for grade A cherries.
