The current espresso mixture Tam Dem consists of two coffees processed by the washed method. The first is from Guillermo Montenegro's El Poste farm in Nicaragua. The second coffee comes from El Salvador, from the Chalatenango region. In the taste you can expect roasted almonds, jam and cocoa.

How do we create Tam Dem?
When creating an espresso mixture Tam Dem , we are always looking for coffees with a strong and distinctive character, which together will create a complex and non-traditional taste experience.

Tam Dem's current espresso blend is based on two coffees:
Nicaragua El Poste - 50%
El Salvador Los Chelazos - 50%

El Poste
A selection from this year's harvest of Mr. Guillermo Montenegro from the El Poste farm, which was harvested from coffee trees of the popular caturra variety and processed by the washed method.

Finca El Poste is located on the border of Nicaragua and Honduras, near the town of Dipilto. The non-traditional taste profile is the result of the interplay of the traditional caturra variety, washed processing with a long 40-hour fermentation and a unique method of long drying in the shade, which keeps green coffee perfectly fresh.

The farm of the Montenegro family and its story show great perseverance and strength. They almost lost the farm three times in 20 years - almost nothing left of it after the hurricane, then they were almost deprived of it by the financial crisis, and when they overcame it, they had to cut down all the coffee trees for Roy and plant them again. We have been going to the farm to pick our coffees in person since 2018 and we are glad that the family persevered with unceasing enthusiasm and is able to produce such amazing coffees.

Los Chelazos
The coffee from this year's pacas harvest comes from the Chalatenango region in northern El Salvador, on the border with Honduras and Guatemala. There is a large national park Montecristo Trifinio, important for its biodiversity. This is a selection of Chelazos harvests, as it is familiarly nicknamed by locals whose harvests are too small to be sold separately.
The coffee was processed by a washed method.
Harvesting takes place in this region from January to March.

The Chalatenango region is one of our most popular ever, as we had the opportunity to spend several months working on farms in 2010. Since then, we return regularly every year and we have the opportunity to observe a huge shift in the quality of processing (and also life!)
