Our import partners, Falcon coffees have been working in Northern Peru for several years now, buying speciality coffee from cooperatives and associations with which they have built lasting relationships.

In Peru, like some other origins, coffee farmers are sensitive to market changes and often lack basic training and the incentive to produce higher qualities of coffee, as premiums often don’t materialise. For these reasons Falcon decided to change the way they buy coffee in Peru and work directly with producers, allowing them to control and improve upon the existing quality and have full financial traceability. Ensuring these two factors would help them to pay higher prices for the coffees and to make sure that producers received a fair price for the coffee they delivered to us, above the market price. To do this, they set up a warehouse in Jaen and started to buy parchment directly from producers.

The Cajamarca region holds a lot of potential for quality coffee, with ideal growing conditions and great varieties, but the quality is often lost in picking, processing and drying, with producers lacking infrastructure and knowledge. The most vulnerable producers are those that are unassociated – those who aren’t members of a cooperative, association or organisation – and they represent 75% of producers in Northern Peru. These producers don’t have access to training sessions or premiums for quality or certifications, and their income is dependent on the market price. Often, local aggregators – a buyer who lives in the same area – will come to the farm or house of a producer and buy their coffee for cash before selling it on; in some cases, directly to an exporter or more often to other traders and middlemen. This results in the producer being paid very little for their coffee and a lot of quality coffee is lost.

This shift in approach to sourcing will allow us to forge long term relationships directly with farmers, improve the coffee quality we can offer from these areas and increase producer household income through access to quality premiums. Falcon now have over 438 registered farmers across the San Ignacio and Jaen provinces.

Where is it from?

Colombia is the third-largest producer of coffee in the world after Brazil and Vietnam – though holds the crown for being the largest producer of washed Arabica. The coffee-producing areas lie among the foothills of the Andes and the Sierra Nevada, where the climate is temperate with adequate rainfall. Colombia has three secondary mountain ranges (cordilleras) that run towards the Andes and it is amongst these ranges that the majority of coffee is grown. The hilly terrain provides a wide variety of micro-climates, meaning that harvesting can take place throughout the year as coffee from different farms will ripen at varying times.

There are more than half a million growers spread throughout the key regions of Nariño, Cauca, Meta, Huila, Tolima, Quindio, Caldas, Risaralda, Antioquia, Valle del Cauca, Cundinamarca, Guajira, Cesar, Madgalena, Boyacá, Santander and Norte de Santander. In a country as large as Colombia, with an established coffee industry that is spread over 17 regions, there is bound to be a variation in quality. However, it is widely accepted that some of the country’s best coffees come from the south-west in the departments of Huila, Tolima, Nariño and Cauca. Key varietals include caturra, bourbon, typica, castillo and maragogype.

Coffee’s importance to the Colombian economy brought about the development of The Federacion Nacional de Cafeteros (FNC) in 1927. This body is responsible for research, technical advisory services, quality control and marketing. Juan Valdez, a fictitious character created by the FNC, is the world-famous moustachioed, mule-riding and sombrero-wearing coffee farmer depicted on coffee sacks and logos. He has very much become the face of the Colombian coffee industry, especially outside of the country.

The "Hacienda La Palmera" is located in the west of the department of Caldas in the municipality of Anserma 60km from Manizales. Its crops are between 1,400 and 1,800 meters above sea level, with an average temperature of 18 C and a rainfall regime of 2,100 ml distributed throughout the year. Characteristics that offer special conditions for the production of high-quality coffees. "La Palmera" is cultivated with 77% of Colombia variety, 18% of Castillo variety and 5% of Bourbon Rosado, of this last varietal we will have its first production in the year 2021. The farm has specialised in two processes of benefit: washed and natural, thus satisfying the needs of its customers.

This coffee was sourced through the Cooperativa Agropecuaria Y De Cafes De Especialidad De Colombia which is an initiative of 20 coffee entrepreneurs to innovate and differentiate the problems of the sector, propose possible solutions and explore the windows of opportunities derived from the production of speciality coffees. By exploring differentiated markets they aim to change the perspective from the commodity coffee market.

The cooperative works on reducing costs, achieving economies of scale, technical advice, administrative training, but its main objective is to promote speciality coffees, implement technology in their production and negotiate an off-the-stock exchange.
