Our El Filito is a pearl in the gentle method. We find there notes of physalis, green apple, grapefruit and brown sugar. Freshly landed in Europe following the last harvest, its vibrant acidity will refresh us all summer long.

Don Silvio has been running his El Pitalito farm for 20 years now, and has recently entered the specialty market. We are delighted with this batch of the Colombia variety, which gives us a complex and expressive cup.

Silvio ferments his cherries in sealed bags for 24 hours, then proceeds to depulping before sending the cherries to a fermentation tank for around 40 hours.
