Congregation Coffee Roasters' (whose name is inspired by the collective noun for a group of alligators) mission is to provide New Orleans and the Gulf Region with quality roasted whole bean specialty coffee.

The company's focus leans heavily on crafting consistent blends, as well as single origin offerings, for restaurant wholesale and retail. We believe in making specialty coffee accessible to the public with thoughtfully designed flavor profiles which build bridges between historical and present trends in coffee. We emphasize communication and education in our offerings to target our audiences's desires. While most of our coffees fall in the spectrum of medium and light roasts, we are sensitive to the history that dark roast and chicory plays in our market and we do our best nod to traditional palates while at the same time pushing the regions boundries.

We are devoted to quality in our work and transparency in our product. We believe in a sustainable business practice, with a desire to grow thoughtfully and respectfully. We support the vibrant communities that make this possible, both locally and globally, with great coffee as our common denominator. Our High Walk gets us going in the mornings. It helps us push our shoulders back, open our eyes, and-- like our cretaceous friends down here-- stand a bit taller. While High Walk is an ever changing and evolving coffee, based on the fresh crops we receive, this blend honors the classic morning cup of coffee-- round and sweet on the palate with a hint of nutty chocolate on the nose. Medium bodied, it has a backbone for milk, but it certainly doesn't need it.

When the day calls for a faster pace, we at Congregation opt for Gallop. While the blend changes with each harvest, the Gallop profile is a staple in our offerings. What starts as a nutty flavor up front slowly turns to the cooled sweetness of milk chocolate and caramelized white sugar. Our Gallop plays nice with milk and sits equally confident by itself in a demitasse. We recommend for those days when you need to lift both feet off the ground in stride.
