Luiz Saldanha and his partners founded Capricornio to breathe new life into five regions in the southern states of Paraná and São Paolo, which until the 1960s were one of the busiest for coffee in the country. Due to the terrible frosts and the growth of other areas of coffee in the north, its cultivation has stagnated, which has led many farmers to move north. Now, thanks to climate change, these regions have once again become attractive to farmers, but it is difficult for anyone to see the potential in them. Only until Capricornio found 20 passionate farmers and started the Four Seasons project: they helped them turn their farms into modern, environmentally sustainable and processed coffee to the highest standards. Now they have begun to show what these coffee areas can offer the coffee world. The low latitude (around the Tropic of Capricorn at 23 ° S) leads to large, slow-ripening cherries with surprising profiles, similar to those at higher altitudes. We were impressed not only by the quality of the coffee, but also by the success of the company in the field of processing.
