Variety, growing conditions and processing methods all have dramatic effects on a coffee’s flavour characteristics. The Discovery genre celebrates the diverse and expressive flavours made possible by these distinctions.

Antioquia in Northwestern Colombia plays host to a diversity of flora and fauna, the beautiful backdrop to Finca Las Mercedes. Over 60 years the Guerra family have completely transformed the once-dairy farm, with a conscientious approach focusing on specialty lot separation and processing, consistently marrying productivity and environmental stewardship.

The cherries undergo an extended fermentation process, after which they are eco-pulped and washed. This Caturra variety offering has notes of orange and papaya with a complex herbaceous finish.
