This coffee has a sweetness that reminds us a whole lot of fresh strawberries along with a complex acidity profile that is citrusy without being sharp. The body is medium heavy, juicy and satiny in texture leading to a desert like experience.

The Farm:
This is our 10th year purchasing coffee from Mauricio Salaverria and his team at Divisadero Farms and the quality that they produce year after year continues to amaze us. Mauricio operates 5 farms around the small village of Ataco located in western El Salvador in the Apaneca range and has produced 4 top 10 COE results and just placed 19th this year.

This lot comes from the highest area of his prized Finca Himalaya which produces some of his best coffees due to amazing soil, protection from the wind and the abundance of shade from beautiful Cyprus and Inga trees. Mauricio and his team have invested heavily in their nursery where they have been cultivating and experimenting with new varieties. While most of the varieties they are working with are aimed at revitalizing the farms with disease resistant varieties some are aimed directly at seeing what varieties will give the most unique and exciting flavor profiles. This SL-28 lot is the result of those experiments and an exciting opportunity to see how a variety normally seen in Kenya will perform in the very different climate of El Salvador. The famed SL-28 variety was created in Kenya during the 1930’s at the now notorious Scott Laboratories and is often credited with giving Kenya coffees their refined acidity and complex fruit notes. Meticulous picking of only the ripest cherries and for careful slow drying on raised beds for over 30 days rounds out the processing and further enhances the quality of this lot.
