Maria Esmilda is a farmer and a member of the young and small cooperative Cedros in Cajamarca, that we started to work with this year. She managed to produce two separate lots of coffees that totally amazed us. She has a one hectare farm above 1900 masl in Espor Piura, mainly growing Caturra. The coffee is depulped, wet fermented for 22 hours, then dried in a parabolic dryer.

Maria Esmilda is a member of Cedros Cooperative. They were established in 2013, but have just recently started to focus on quality and sustainability. Maria is one out of a few producers that so far is investing in higher qualities. And it totally works.
Born in the San Luis de Lucma District, Cutervo, in 1954, Maria only completed primary studies at Daniel Alcides Carrión Elementary School in San Luis de Lucma. Then she was only dedicated to support her parents in the field (cattle farming and cultivation of potatoes). At the age of 22, she left her parents’ home to get married with her “Prince charming”, Mr. Ezequiel Chinguel. They were looking for new life alternatives when she decided to dedicate herself to the world of coffee, that’s where they moved to live in Sport Piura in the district of Huabal.
From then on, they lived in this place dedicating themselves exclusively to the cultivation of coffee and livestock. In 2000, she joined the Huancaruna Company as coffee grower because of her great knowledge she acquired during the last 20 years of hard work cultivating coffee. But years later, she had to give up the group due to personal problems. In 2017 she joined the Cooperativa de Servicios Multiples Cedros where, until today, she is an active member. She keeps acquiring a lot of knowledge on the cultivation of coffee, having its plots within favorable climates. Over time, she implemented and improved her wet and dry processing modules as well as introducing various varieties of coffee which has led her to be a successful producer producing very high-quality coffees that currently draws 86 cup points and up.

Anam Coffee

Jaén is a city located in the Cajamarca region in northwestern Peru. It is a fairly poor region because it is isolated from the major Peruvian agglomerations. Very mountainous area, the main economic resource is agriculture with rice, cocoa, corn, mango, avocado and of course coffee production. There are also many guinea pig farms. Many terroirs overlook the city, such as the Huabal and La Palma central terroirs.

No chemical residue and it leaves the unique coffee flavours intact.

Peru is the 8th largest coffee-producing country in the world and exports nearly 90% of its production. Its coffees are mainly the work of small producers employing certified organic farming practices. And this coffee is no exception. It comes from Jaen, a city located in the Cajamarca region, in the North-West of Peru. This coffee is a varietal blend of red caturra, red bourbon and typica, grown between 1200m and 1800m

This coffee is decaffeinated by the canadian company Swiss Water. Water decaffeination is non-chemical and uses the principle of osmosis, according to which two solutions separated by a permeable membrane will balance their caffeine concentrations, from the least concentrated medium to the most concentrated. The method best preserves the coffee’s natural oils and flavours with non of the chemical residue from more traditional decaf processes.

Colombia’s culture and history is intertwined with the saga of its coffee. The country is among the world’s best-suited for cultivation – gentle Pacific breezes and temperate climate, equatorial forests and lofty elevations all make coffee trees happy. However, to try and summarize Colombian coffee as a whole would be a fool’s errand; the country is vast and its crop is as diverse as the regions and people who grow it.

Take this organic coffee from Santander department, for example. Aratoca is the name of the municipality in Santander where the coffee was grown. It’s located nearly as far north from Bogotá as Huila is south, and has a reputation as an older, more traditional growing region with a larger ratio of well-established medium estate farms as compared with the more frequently seen smallholder micro-plots in the South. Santander’s coffee tends to be lower in acidity; its warmer climate and further distance inland combined with fewer remaining Caturra plants tend to create a more mellow flavour profile.

While Oscar’s coffee is a little lower in acidity than many Colombian coffees we have roasted, it is anything but mellow. The cup is just bursting with ripe fruit flavors – not the citric notes we find from Narino and Cauca – more like ripe plum and sweet strawberries. An atypical flavour profile for the North, for sure!

Oscar and his family work the 60-year-old, 85 hectare farm, which includes banana, citrus, and sugarcane as well as coffee. His is now the third generation, and his two sons are next in line when the time comes to take over operations in the family business. The farm offers housing for temporary workers, a self-contained water purification system for drinking, irrigation, and processing, and a soccer pitch for down time during harvest. The solar exposure is intense in Santander; as such Hacienda La Pradera is equipped with solar dryers to protect the drying parchment from intense radiation, as well as the occasional afternoon rainshower that’s always a possibility.

Works well as either espresso or filter coffee.

On arriving at the La Pradera and Santa Maria farms in Aratoca (in the region of Santander), you will be welcomed by Oscar Daza, who has taken the farm over from his father, José Rosario Daza. Oscar heads a group of eight farms, four of which belong to his family. At 1700m in altitude, all are certified organic and Bird Friendly. He is the first in the region to finance his own organic certification, which is something the local coffee grower’s federation generally pays for. Oscar is an entrepreneur in the true sense, a pioneer and it was this that pushed him to become independent, in order to find his own customers, be free to make his own decisions and manage his production in line with his own vision of coffee growing. His vision is based on his great faith in shade production, and there are no fewer than 15 different tree species. His agroforestry system goes against the local coffee federation’s recommendations, but he stands firmly by it. He is sure that preserving shade coffee production and quality can only improve his coffee. Despite a few difficult years spent battling with the bureaucracy from the local federation, Oscar has finally found his own customers and now sells more than 60% of his production directly for export. We supply this coffee under the name Comuneros, because it can come from all eight of his farms.

Aratoca Communeros

Our Christmas coffee proved a real hit when it first made its debut for Christmas 2016. This year, our limited edition Christmas blend consists of 100% organic Arabica beans from Honduras and El Salvador, all harvested in 2020, and roasted a little darker to produce nutty dark chocolate flavours which are simply beautiful as the weather gets a little colder. Our Christmas coffee is a real crowd pleaser, dark, rich, sweet and nutty. Its versatile and will make either a great filter coffee, or a rich espresso, great with milk. It really is a hug in a mug!

Christmas Coffee for 2020

The Ahuachapan region, located a few kilometres north of Ataco, is a region with a strong coffee-producing history. It benefits from good year-round water availability, dense forests and soils rich in organic matter that make it a unique terroir well-suited to quality coffee production.

In the Ahuachapan region of El Salvador, 10 small coffee farmers united to create an oasis of high-quality, organic, environmentally friendly coffee. By maintaining a ratio of 40% untouched forest to 60% coffee trees grown under a diversified, three-strata shade canopy, the farm itself serves as a home to many endemic species, thus promoting biodiversity, actually increasing ecological stability.

Finca Oasis’s coffee is likewise a beautiful balance of sweetness and fruit – a harmony of complementary flavours.

The topic of organic coffee can be polarizing. For those in favour of it, the environmental benefits of organic production are obvious. Those on the other side might mention the inefficient and expensive certification process, and the fact that in some countries it’s nearly impossible to have a good harvest without any chemicals. The fact is that organic coffees are more expensive. Production costs are higher, as labour costs tend to be higher than in non-organic production. Mixing compost and then hauling it to the fields and weeding by hand will always be more work than spraying synthetic herbicides or fertilizers. As an organic coffee farmer, you will be responsible for the cost of inspection, which includes the travel and lodging expenses of certifying auditors, as well as annual certification fees. This effectively puts organic certification out of reach for most small-scale farmers unless they are part of a cooperative, in which case certifying costs can be split between all members. Our El Salvador Oasis is one such cooperative of 100% organic small sized coffee farmers, all arabica and all single origin.
