Attention dark roast fans…Sumatra, Indonesia, Java and Sulawesi produce coffees that we all know and love.  We found this little gem from Sulawesi and had to pounce on it.  Utilizing a darker roast profile we like to bring the brooding bitter dark chocolate notes to the forefront without compromising the dried fruit sweetness and pleasant nuttiness this coffee offers.  Enjoy black or with your favorite cream and/or sweetener.   

Origin Notes
Formerly known as Celebes, coffee was introduced into Sulawesi centuries ago by the Dutch East India Company when Indonesia was under Dutch control.  The first Typica plants arrived, as coffee production spread throughout Java and Sumatra.  Our Tana Toraja Sulawesi coffee comes from various small farms in the region at elevations ranging from 1300 to 2000 meters above sea level.  The cherries were double-picked to remove any physical defects, a quality control practice that ensures only ripe red cherries are used.  The coffee was then processed using the wet-hulled method (locally know as “Giling Basah”), in the same way as other Indonesian coffees.  This process helps give this coffee its classic Sulawesi characteristics.
