To round out our offerings from the 2019 season, we have a final Brazil release from yet another new producer here at 1000 Faces.  We’re excited to present this extremely balanced and structured Brazilian offering from the beautiful farm of Adonis Cerri - Fazenda da Mata. 

We had the pleasure of visiting Adonis with the FAF team back in August 2019, thus we can fully confirm the farm is named Fazenda da Mata (in Portuguese, Farm of the Forest) for a reason! His 40 hectares of land weaves in and out of wild forests and stretches up to nearly 1400 masl at the highest peaks overlooking the Da Grama Valley.  This creates a very unique farming terrain and climate, particularly for Brazil where coffee is more commonly grown in more of a monoculture / plantation style.  Contrary to this more traditional farming model, Adonis utilizes the natural forest, hardwood shade trees, and cover crops, throughout Fazenda da Mata’s many hills and valleys.

Don’t be scared to tighten up the grind! Like our other Brazil offerings, Fazenda da Mata shines on the finer end of the grind size spectrum.  Higher extractions help fill out the coffee with more densely saturated flavor - like dark chocolate, brown sugar, and almond butter.  Good news is that this coffee is really versatile and forgiving as well.  No matter what method you choose, you can expect a very sweet and full-bodied brew. 

If your coffee tastes overly nutty and the mouthfeel is thin and watery, like boiled peanuts - try grinding finer. 

If your coffee tastes aggressively bitter, like over-steeped black tea, and the mouthfeel is sticky and gritty, like cocoa powder - try grinding coarser.
